Good Food And Stuff

I haven't updated this blog in about a year! But, lately I've been making (and eating) some new good recipes I've found. I got a lot of yummy looking recipes from my Good Housekeeping magazine (free subscription when we purchased our rugs!), and some I've modified from the internet.

Today's latest is Strawberry-Cinnamon bread, and as I've now eaten some, I must say it is pretty delicious:
16 oz package of strawberries (divided)
3 1/8 cups flour
1 2/3 c white sugar (divided)
2-3 t ground cinnamon
2 t vanilla
1 t salt
1 1/4 vegetable or olive oil (or a mixture of both)
4 eggs, beaten
1 t baking soda

Preheat oven to 350 F.
Puree 1/2 of the strawberries, with 1/3 c sugar.
Dice remaining 1/2 of strawberries and mix with 1/3 c sugar.
Mix flour, salt, cinnamon, 1 c sugar, baking soda in a bowl.
Blend oil, beaten eggs, and vanilla.
Add all strawberries to eggs and gently combine.
Add flour mix and blend until just mixed.
Pour mix into 2 greased bread pans.
Bake approx. 40 minutes.
Let cool 10 minutes in pans on baking racks.
Turn bread out and finishing cooling on racks.

You could add more diced strawberries if you want, too. I like to puree some of the fruit when I am making fruit bread/scones. It seems to spread the fruit flavor through entirely, and the pieces of fruit punctuate the flavor.

Michael has yet to taste my latest creation, but Isaac seemed to like it. Although, Isaac seems to like any sweet thing you give him. But, I liked it!

We're eating our leftover Not Mexican Mac and Cheese tonight, so I'm hoping having fresh baked bread will ease that blow for Michael. It looks like it might be a slightly stormy night, so I'm looking forward to cuddling up with my mac and cheese casserole, Isaac and some books, and some strawberry bread.

But, first, we have to pick up Isaac's toy disaster zone.
